As far as Justin Bongiorni is concerned you can keep your toast, your gourmet sandwiches, your extravagant grilled cheese. For the head baker at Allegro Hearth Bakery, bread stands alone. “I don't need to add anything to it, really. It's fine just like that for me.”
Each night Bongiorni gets to work at 6 p.m. and shapes flour, yeast, salt and water into the bread his neighbors will take home the next day.
It can be lonely on the night shift, working while most people sleep. In Squirrel Hill, Justin Bongiorni spends his nights in the company of bread.
